I had one of those days recently that I thought was going to go one way, but instead everything sort of fell through at the eleventh hour (queue the tiniest violin). I wallowed like a five year-old for a little, but then I looked at the sun shining outside and realized I have an entire day to do whatever my little heart desired. How often does that happen? Things were looking up.
So what did I decide to do with all this time on my hands? Um, I made pie. Not just any pie. I made my first pie ever. (True story!) For some reason I've always been intimidated by the idea of baking a pie, thinking it was some super intense, unapproachable category that you just didn't broach unless you really knew what you were doing. I'm here to say, it's really not that hard. Seriously! And it looks so delicious and impressive at the end (if I do say so myself), that you will be super proud of yourself for finally giving it a shot.

I was curious how the whole lemon slices would be, but they add a slight touch of sour bitterness (from the peel) to this super sweet pie that is just, ugh, so right. Also, the pie crust comes out so flaky and buttery...stopping at one piece will definitely test your will power. Oh well.
All I know is this will be one of many pies I plan to make in the near future. If you guys have any pie recipes you're obsessed with, I'd love any and all recommendations, stat!
